They’re so easy to make and perfect for a weeknight dinner. I love making stuffed peppers! They’re so easy to make and you can customise the flavors to your liking. For this particular recipe, I went with black beans, corn, bell peppers and onions. The bright colors, along with the flavors, create such a cozy and comforting meal. With a side of rice or quinoa, it’s definitely one of my favorite weeknight lunches or dinners. Salt and pepper – To season. How to make stuffed peppers Cook the peppers: Preheat oven to 400F (200C) and lightly grease a baking dish. Cut the bell peppers in half lengthwise and remove the seeds and stems. Arrange the peppers in the baking dish, cut side up. Cook in preheated oven for 15 minutes. Cook the veggies: Meanwhile, heat up some oil in a pan set over medium heat. Once the oil is hot, add the diced onion and minced garlic. Saute until softened and fragrant, then add the corn and tomatoes. Cook for about 5 minutes, stirring regularly, then add the black beans. Mix everything together until combined and cook for a further 5 minutes. Mix with spices: Mix the chili powder, cumin and smoked paprika together with some salt and pepper. Add the spices to the pan and mix until everything is evenly combined. Cook for a few minutes until some of the liquid from the tomatoes has been reduced. Finish the dish: Remove the baking dish with the peppers from the oven and add 2 tbsp of water to the dish. Fill each pepper with some of the veggie mixture and top with some shredded cheese. Bake in the preheated oven for 22-25 minutes, until the cheese is golden and melted. Serve: Top with some chopped cilantro and a drizzle of freshly squeezed lime juice. Serve with quinoa or rice, if preferred. What to serve with These stuffed peppers are great as a main dish served with some Mexican inspired sides.
